High Performance engines rely on three elements to keep and maintain the optimum temperature window. Air, Coolant, and, vitally, oil. Too cool and the engine will prematurely wear, too hot and the oil viscosity breaks down, in extreme cases boiling the oil pushing it's lubrication properties into negative territory (just about useless!).
