Part of the rebuild or restoration process of any classic motorcycle engine is the refurbishment of the carburettor/s.
If all the jets, filters,
Float bodies, needle, mixture adjustment screws and springs are renewed, the better the carbs will run and keep their tune.
It only takes one worn jet to spoil the overall performance, and of course makes the balancing of all the carbs difficult, if not impossible.
This important component is one that should ideally be replaced as a matter of course.
